Ok. So the game's over, a last second catch was made and there was much drowning of sorrows. That means hangovers on Sunday. And hangover hangovers on Monday. And we surely had enough burgers, beans, jambalaya, gumbo, sausage, and other assorted spicy, grilled, fried, and such foods on Saturday, that we need something simple and easy for Sunday's lunch and dinner.
Let's start with brunch. We still need some protein...all hangovers need something slightly greasy...and of course, cheese. So that means Andy's patented grilled egg and cheese sandwich.
Grab two frying pans, one smaller than the other. Preferably the smaller being a cast iron skillet. Set them both on high heat. Leave them alone while you prepare your sammich.
Take two slices of bread, and lightly spread mayo and dijon or honey mustard on each. Slice up very thin slices of smokey or medium cheddar cheese. In the smaller pan, quickly scramble (or fry depending on your tastes) an egg (no millk!!), and then leverage it on top of the cheese.
Remove both pans from heat after about 5 minutes. Put the big pan on top of a potholder or trivet or other heat resistant surface. Close up your sandwich and spritz it with olive oil - you do have spray olive oil, right? You don't? Hmm. Ok, well, do the best you can to VERY LIGHTLY cover each side of the sandwich with oil. Drop it in the big pan, put the bottom of the small pan on top of it, and then wander off for about 5 minutes. Don't touch it! When you come back, take the top pan off, spatula your sandwich out onto a plate, cut, eat, and enjoy.
Oh, if you'd like, you could also cook up some thin strips of bacon in the larger pan while your sandwich heats. If they're not done when you get back, while your sandwich cools slightly return to heat and finish them off. Drop the bacon on top of your sandwich as you eat.
