15 minute Spanish Chicken & Rice

What you need:

1 package *insert brand here* spanish rice
1 can *inser brand he...* what the hell am I talking about? Use Tyson or Swanson, please, chunk white chicken.*
Tortilla chips (white restaurant style or yellow either work, but I prefer white. Yes, I am a chip-bigot)
Shredded cheese of choice - the "mexican" or "fiesta" mixes work best, that have cheddar/asiago/monterey jack/etc
Sour cream

Cook the rice on the stove top according to package directions
Drain the chicken and shred into the pan during the last 5 minutes of cooking
Serve in a bowl over the tortilla chips, topped with cheese and sour cream!

 *For a bigger, family style meal, low-heat poach 2-3 chicken breasts until you can shred them, then cook two packages of rice. Simmer the shredded chicken in a separate pan with taco seasoning according to directions. Add chopped onions, tomatoes, bell peppers, 1 tbsp. garlic, salt, and pepper to taste.
